Spinach Pie


Ingredients:

450gr Spinach
1 Large sheet of puff pastry
3 Garlic Cloves (finely chopped)
275gr Mozzarella OR 150gr Mozzarella and 125gr Feta)
1 Tablespoon of Oregano
A pinch of basil
2 Stock cubes (vegetarian)
2 Eggs (beaten)
60Ml Double Cream

Method:

Preheat the oven to 210 Degrees C

1: Wilt the spinach in a pan with some butter - Feel free to add some onions and courgette etc
2: Add the garlic
3: Beat the eggs with the cream, oregano and stock cubes
4: Lay the pastry on a baking tray, put the spinach on top
5: Tear the mozzarella over the spinach
6: Pour the egg/cream mix over the top
7: Sprinkle over some Basil and Black Pepper

Bake for 30-40 mins or until the pastry is golden
